This Week in the Foothills

TRAILS

South Table Mountain, in our beloved Golden backyard, is adding to the trail system with a new trail that will create a three mile loop on the mesa. The T-Rex Tooth Trail (awesome name) is expected to open in spring of 2026. Presumably, the trail name is a nod the the first ever Tyrannosaurus rex tooth discovered right here on South Table Mountain, way back in 1874.

One of the coolest features of the new trail is it’ll pass by the Colorado Amphitheater, which is an old time structure built in 1935 to serve the Colorado National Guard just below at Camp George West.

Candidly, I’m pretty excited about this. I’ve been on the trails all around South Table, and never even knew this hidden treasure existed.

We went to a pumpkin patch a few weeks ago, and I had some delicious apple cider mini donuts. And this made me think about something serious… I believe APPLE to be the flavor of fall, not pumpkin like Big Coffee would like you to believe.

So with that preamble out of the way, here’s another recipe in the Foothill Crew Cooking Corner ™️ series.

These Crockpot Apple Cider Pork Bowls are looking like winners for this fall week leading up to Halloween. Who doesn’t love crock pot pork? It’s about as easy as it gets, and actually more impressive if you manage to mess it up rather than make a delicious meal. You got the sweet potato puree (note: anytime you see puree on a menu, your bill just 2x’d), apple (duh), and coleslaw mix (for a nice texture) to make one delicious and satisfying bowl.
