History Unearthed

This Week in the Foothills

GOLDEN HISTORY, UNEARTHED

Over in Golden, crews breaking ground on the old Coors ceramics plant are digging up more than just dirt. They’ve started finding fragments of the site’s industrial past—old bottles, pottery shards, and bits of the original glassworks that operated there for decades. It’s all part of the huge Clayworks redevelopment, a project that’s turning a historic manufacturing site into a new mixed-use district with housing, shops, and public space.

I love this kind of thing: when a place evolves, but the past still pokes through and becomes part of the story. If you’re into local history, design, or just watching Golden reinvent itself, this is one worth keeping an eye on.

REAL ESTATE

Here’s a cool little project for someone with vision. This Evergreen cabin needs renovation, but it has beautiful original lodgepole pine beams that could absolutely shine with the right touch. The wallpaper can go (it’s had its moment), and the wood paneling could be reworked to bring out the cabin’s character. There’s a lot of wood paneling—like, a lot—but that’s part of the fun. With some creativity, this place could turn into a really charming mountain retreat.

HOME COOKIN’

Sometimes you just want an easy meal that everyone actually likes—and this one hits the spot. I made it last night, and it’s officially in the weeknight rotation. These sweet-potato and chorizo tacos come together in 20 minutes with just three main ingredients, but the flavor punches way above their weight. The spicy chorizo plays perfectly with the sweetness of the potato, and the black beans add a hearty base that makes the whole thing feel substantial.

Chef Tip: Add an avocado-ranch slaw on top for a cool, crunchy finish.
